Sodium diacetate (SDA), a molecular complex of sodium acetate and acetic acid, is also known as monosodium diacetate—additionally referred to as solid acetic acid in Japan. It presents as a white crystalline powder, featuring hygroscopic properties and a faint acetic acid odor. Flammable in nature, it dissolves readily in both water and ethanol. With extremely low toxicity, its oral LD50 values are 3.31g/kg in mice and 4.96g/kg in rats, while the acceptable daily intake (ADI) is set at 0~15mg per kg of body weight for humans. In living organisms, sodium diacetate metabolizes into water and carbon dioxide, leaving no residues in the human body and exerting no damaging effects or side effects on humans, animals, or the ecological environment. Owing to its safety, non-toxicity, non-residue, non-carcinogenicity, and non-teratogenicity, it is classified as a "Class O" toxic substance by the World Health Organization (WHO) and approved by both the Food and Agriculture Organization of the United Nations (FAO) and WHO for use as a mold inhibitor, preservative, and fresh-keeping agent in foods, grains, and feeds.
