Citric acid Anhydrous is an important organic weak acid, also known as citric acid. It is a naturally occurring component in both animals and plants, and is also an intermediate product in biological metabolism (the tricarboxylic acid cycle). Industrially, it is mainly produced by deep fermentation of sugar-containing substances (such as corn starch, molasses) by microorganisms like Aspergillus niger. Unlike citric acid monohydrate,  citric acid anhydrous is crystallized from hot concentrated aqueous solutions and does not contain bound water, thus having a higher acid concentration per unit mass and better stability.
