Acetic acid (systematic name: ethanoic acid, chemical formula CH₃COOH) is the primary constituent of vinegar and a pivotal fatty acid. It occurs naturally in numerous plants either freely or as esters. Vinegar has been brewed and utilized for millennia (documented in ancient China), and concentrated acetic acid was successfully synthesized by Stahl in 1700. Pure acetic acid is a colorless, pungent-smelling liquid with a melting point of 16.6℃, boiling point of 117.9℃, and relative density of 1.049 (20/4℃). It is soluble in water, ethanol, glycerol, ether, and carbon tetrachloride but insoluble in carbon disulfide. Anhydrous acetic acid crystallizes into a solid resembling ice at low temperatures (termed glacial acetic acid) and exhibits corrosivity. As a weak organic acid, it possesses typical acidic characteristics and can react with alcohols via esterification.
