Erioglaucine disodium salt (FD&C Blue 1, also known as Brilliant Blue FCF), used as a colorant, is highly compatible with food ingredients and is commonly used in candies, baked goods, soft drinks, and desserts. Erioglaucine disodium salt has a water solubility of 20 g/100 ml at 25°C. It exhibits good stability in pH and 10% sugar systems, moderate light and oxidation stability (unstable in alkaline solutions), and good heat resistance. It is blue-green in color and has strong tinting strength; when mixed with primary colors such as FD&C Yellow 5, it can produce a variety of hues.
