As an important food preservative, benzoic acid inhibits molds, yeasts, and bacteria under acidic conditions—but has little effect on acid-producing bacteria. Its best antimicrobial performance occurs at pH 2.5–4; typically, lower pH is better, and it can be used up to pH 4.5–5.
