Sodium metabisulfite (chemical formula: Na₂S₂O₅) is a white crystalline or powdery solid that has a faint sulfur odor. It is toxic if inhaled and can cause severe irritation to the skin and body tissues. When exposed to high temperatures, it decomposes and releases toxic fumes of sulfur oxides and sodium oxides.

Sodium metabisulfite (CAS No. 7681-57-4) has strong reducibility, making it widely used in food, chemical industry, medicine, and other fields. In the food industry, it acts as an antioxidant, preservative, and bleaching agent, applied to products like meat, wine, and preserved fruits. In the chemical industry, it’s used in textile printing and dyeing, papermaking and pulping, water treatment, and leather softening. In medicine, it serves as a pharmaceutical intermediate and an antioxidant for injections. It also has applications in photography, rubber production, and agriculture.
Notably, it releases toxic sulfur dioxide when in contact with acids. For storage, it must be kept in a sealed container in a cool, dry place, and kept away from acids and oxidants.
