Sodium bicarbonate is a leavening agent. A 1% solution of this substance has a pH of roughly 8.5 at 25°C. It works together with food-grade phosphates—acidic leavening compounds—to release carbon dioxide. This gas expands during baking, giving baked goods a larger volume and a soft texture when eaten.

It is also used in dry-mix beverages to achieve carbonation. This carbonation happens when water is added to the mix that contains sodium bicarbonate and an acid. Additionally, it is a component of baking powder. Other names for sodium bicarbonate include baking soda, bicarbonate of soda, sodium acid carbonate, and sodium hydrogen carbonate.
