Lactic acid, also called 2-hydroxypropionic acid or α-hydroxypropionic acid, features an asymmetric carbon atom in its molecular structure. This gives rise to three optical isomers: the d-isomer, l-isomer, and the racemic dl-isomer.First isolated from yogurt by Scheele in 1780, it derives its name from this source. The d-isomer and racemic isomer are present in the muscle tissues of humans and animals, while the l-isomer is a natural metabolite in mammals. It also occurs naturally in fruits like papaya, apples, and tomato juice. Commercially available lactic acid—whether produced via fermentation or chemical synthesis—is typically the racemic dl-isomer.With both hydroxyl and carboxyl groups in its molecule, lactic acid exhibits the chemical properties of these two functional groups. It forms carboxylic acid esters with acid anhydrides, lactate esters with alcohols, and salts with ions such as sodium, calcium, and ferrous iron. Thanks to the coexistence of hydroxyl and carboxyl groups, it can undergo self-esterification to form linear polyesters, and even cyclic compounds (specifically the cyclic dimer lactide) [2]. Under mild oxidation conditions, it converts to pyruvic acid. When heated above 250°C, it undergoes chain scission and decomposition, producing acetaldehyde along with the release of carbon dioxide and water.
