It has a molecular weight of 90.08, a melting point of 16.8°C, and a boiling point of 122°C (under 1.8665~1.9998kPa). Its acid dissociation constant (Ka) is 1.38×10⁻⁹ at 25°C.Industrial-grade products are liquids with a sour taste, readily soluble in water and ethanol, slightly soluble in ether, and insoluble in chloroform, carbon disulfide, and petroleum ether. Lactic acid mixes easily with water and is not prone to crystallization. When the concentration of lactic acid exceeds 60%, it exhibits high hygroscopicity.Therefore, commercial lactic acid is usually a 60% aqueous solution. The content of pharmacopoeia-grade lactic acid ranges from 85.0% to 90.0%, while the content of food-grade lactic acid is over 80%. Typically, lactic acid is a colorless or pale yellow liquid, which can be purified by steam distillation. Repeated fractionation under a vacuum of 67133Pa yields high-purity lactic acid, which can then be converted into monoclinic crystalline lactic acid.
