Glyceryl monostearate (abbreviated as GMS) is a very common non-ionic emulsifier. Its appearance is usually a white or beige waxy solid (such as sheets, beads or powder), with almost no odor or taste. It can be produced through industrial synthesis, and is also naturally present in the fat metabolic products of the human body as well as many foods rich in fat. It is insoluble in water, but can be dispersed in hot water under strong agitation; it is easily soluble in organic solvents such as hot ethanol, acetone, etc., as well as mineral oil and fixed oil.

In food products, GMS is mainly used as an emulsifier, thickener and anti-aging agent, and has been recognized by the US FDA as a "generally recognized as safe (GRAS)" substance; it is widely used in skin care products such as creams, lotions and hair conditioners, helping to stabilize the mixture of water and oil components, giving the paste a smooth and silky texture. It is also commonly used in antiperspirants, deodorants, cosmetics and sunscreens. As an excipient for medicinal purposes, it serves as an emulsifier in ointments and emulsions; in solid preparations, it can act as a matrix or solid dispersion agent for controlling drug release. In the industrial field, it also functions as a additive for plastics and textiles, a lubricant, and a dispersant.
