Acid Red 18, as a food coloring, can be used to color various foods such as fruit juices, candies, and ice cream. However, its use in dried meat, meat products, and aquatic products is prohibited to prevent unscrupulous individuals from using it to mask the appearance of spoiled raw meat. Relevant Chinese standards stipulate that its usage scope and maximum dosage are consistent with those of amaranth red. Specifically, the maximum dosage for candy coloring coatings and soy milk beverages is 0.1 g/kg, and the maximum dosage for red sausage casings is 0.025 g/kg, with a residual amount ≤0.01 g/kg
