Fumaric Acid#110-17-8
Fumaric acid is a key raw material in the organic chemical industry and a core intermediate in fine chemical products. It is also an important derivative of maleic anhydride. Its applications extend to multiple industries, including food, coatings, resins, and plasticizers.Fumaric acid primarily functions as an acidulant. It is commonly found in liquid foods such as soft drinks, spirits, frozen desserts, and concentrated fruit juices, and is also used in solid or semi-solid foods such as canned fruit, pickles, and ice cream.Fumaric acid also serves as a gas-generating agent in solid beverages. Firstly, it imparts excellent bubble durability, allowing bubbles to last longer; secondly, it optimizes the product's texture, resulting in a more delicate and refined taste.

Fumaric Acid#110-17-8 Application
Fumaric acid is a strong acid with two significant physical properties: first, it is non-hygroscopic and does not readily absorb moisture from the air; second, it has poor solubility, dissolving only 0.63 grams per 100 ml of distilled water at 25°C, and its dissolution rate is slow in cold water. However, mixing it with sodium dioctyl succinate effectively improves its solubility. Furthermore, reducing the particle size of fumaric acid also increases its solubility, with smaller particle sizes resulting in higher solubility. In practical applications, fumaric acid and citric acid can be substituted for each other: 0.317 kg of fumaric acid can replace 0.453 kg of citric acid.
