Tartrazine is a widely used synthetic food coloring and one of the three primary colors of this type of coloring. It is a bright yellow powder or granules with an azo heterocyclic structure and can be safely used for coloring in food, beverages and many other fields. Its chemical name is 1-(4-phenylsulfonate)-4-(4-phenylsulfonate azo)-5-pyrazolone-3-carboxylic acid trisodium salt.
